Sweet Potato Cream

¡Buenos días!

How are you friends? Tuesday and almost mid-week. I keep asking myself where time goes? I mean, am I stuck in routine? I wake up, work, study, workout, eat, sleep, repeat! What is going on? Although, I’m pretty up-to-date with tasks I feel like time keeps flying and I’m missing something! Buuuut, today I’m not here to complain. I want to share a quick recipe that I tried last week.

Sweet Potato Cream

IMG_1633It was: oh so creamy! Perfect for an entrée, or if you are in the mood of a creamy dinner.

IMG_1630I love sweet potatoes, so what can I say? I made this on Wednesday last week, at my mom’s house. When I arrived I was starving, but I wasn’t in the mood of cooking tons of food, so I went for something lighter while mom prepared dinner.IMG_1634I added cinnamon at the end for a twist ;)

Let’s go to the recipe, shall we?

Sweet Potato Cream

Servings: 1

Ingredients:

  • 1 small sweet potato (peeled and cut in squares)
  • 3/4 cup organic vegetable broth (low sodium if available)
  • 2 cups water
  • Ground nutmeg (to taste)
  • Ground ginger (to taste)
  • Seasonings (to taste, oregano, ground cumming, black pepper)
  • Cinnamon (optional, to taste)

Instructions

  • In a pot, add all the ingredients (except cinnamon) and bring to boil (medium temp).
  • Once the sweet potato is tender, throw everything on a blender (add the liquid part little by little until you reach the consistency you desire).
  • Serve warm and top it with cinnamon.

      I can eat sweet potatoes almost everyday if possible :D I like to try different recipes, if I can’t create one, I’ll use my favorite tool: google!
